Add Claude entry: email-connect test harness, and the fixtures that were too clean

EMAIL-WP-0005 closed. The entry records what the workplan did not set out to
find: hand-written .eml fixtures carry no Received: headers, so a reply
heuristic matching that word against headers had been classifying all real
mail as a human interaction since the scanner shipped.
